Salsa Verde w Tuna Steak


 Salsa Verde is my first recipe i want you to remember. Its so good!



Serves 2 or 4 
Takes 10 Mins max. 
Shopping List : 

2 or 4 Tuna Steaks 
2 Anchovy Fillets 
1 Table spoon Capers
1 Green Chilli 
1 Garlic Clove 
2 Teaspoon dijon Mustard 
Bunch FRESH parsley (flat leaf)
Bunch FRESH corriander
1 Table spoon white wine vinegar (TBH i wouldn't bother buying it if you don't already have it)
Rocket 

Step By Step 

1. Grab a Large Mixing Bowl
2. Finely chop 2 anchovy fillets and two capers into a paste
3. Add to mixing bowl along with 1 clove grated garlic and Two teaspoon Dijon mustard
4. Chop Bunch of Flat Leaf Parsley and Bunch of Coriander. Put in bowl
5. Cut Green chilli down the middle, remove seeds and cut finely, add to bowl
6. Add a good glug of olive oil, a tea spoon of white wine vinegar (if you have it) scrunch and mix it all up. 

7. Rub a little olive oil into tuna, and generously season. Place on hot griddle pan, large frying pan or BBQ. Do not touch or turn until white is almost half way up the side. 

 8. Turn and Season again. Cook until Red meat is just visible.

6. Base your plate with Rocket, Glaze with Balsamic, Cut tuna in half and whack a big table spoon of Salsa Verde. Eat and Enjoy.

Handmade Black and Blue Burger

After the Horse scandal i had to show people how simple it is to make a burger. Here we go!


Shopping List :

1 Pack Extra Lean BEEF Mince 
Half Red Onion
1 Egg
Rocket, Tomato, Mayo
Blue Cheese (Cambazola is mild)
Ciabbatta Buns
Smoked back Bacon

Step By Step : 

1. In a dry Pan fry off 4 pieces of Bacon
                                                    
2. Finely chop Half a Red onion, Place in a large mixing bowl with 1 Table spoon Black Pepper, Pinch of Salt. 
3. When bacon is cooked, finely chop and add to mixing bowl with BEEF mince and ONE egg.
 4. Mince Burger mix into a ball, go rough with it and make sure you give it a couple of mins mixing.
 5. Split the ball in half, then the halfs in half and work into a patty shape. This takes a bit of doing but youll get it!
 6. In a hot Griddle pan or BBQ grill the burgers. (TIP: Never turn or touch a burger untill you need too) cook a piece of bacon for each burger.
 7. Half your buns and start to toast.
 8. Flip Burgers and bacon, Add Blue Cheese to cooked side. More the merrier!
 9. Take your Bun, ADD Mayo, then tomato and pickles if you want!
10. Add your Burger, Drape over the bacon, and on the other half of bun ADD Rocket. I like to serve open, you do what you want! Enjoy! 



35 Min Asparagus Soup w Bacon

I had so much fun in the kitchen tonight, had the boys round and cooked a feast. Such a great soup, the perfect starter!


Serves 4
Cooking time 35 mins approx 
Shopping List : 

Smoked Back Bacon
400g Asparagus 
1 1/2 Chicken stock Cube
1 White Onion
Butter 
Olive Oil 

Step By Step

1. Chop onion, Finely chop all Asparagus


 2.In a large pan heat Olive Oil, fry off Onion.


3. Cook till it starts to turn Golden, Then ADD Asparagus


4. Make 500ml chicken stock using 1 1/2 chicken stock cubes .
5. Once Asparagus has softened ADD chicken stock. Cook for 7 mins


6. ADD 100ml Double Cream and Blend till smooth.


7. Finley cut up bacon. 


 8. Using a hot Griddle pan and a fork move the bacon round shredding it up. Cook till crisp.


 8. Thinly slice a ciabatta, toast and cut in half. Place in bowl, sprinkle bacon. Enjoy

Perfect Pre Workout Pasta

Im not a Nutritionalist, but this must be the perfect healthy pasta!


Shopping List :

1 Large Lemon
Pine Nuts
Broccoli
Pasta (I went for Shells but id prefer Farfalle *Bowties*)
500g Chicken Breast or thigh
Chilli Flakes
Garlic

Step By Step -

1. Bring a large pan of Salted water to the boil
2. Chop Chicken finely


3. Oil a wok and heat till HOT. Slap the chicken in pan. Stir and Seal.


4. Chop garlic, i like it rough so it doesn't just disappear. 


4. Juice 1 Large Lemon


5. Throw in a handful of pine nuts and give a little toasting. 


6. Add the Juice of one lemon, The Garlic, a pinch of Chilli Flakes and Simmmmmmmmer.


 7. 3 mins before pasta is cooked, Add Broccoli


8. ADD 3 table spoons of the salted pan water to the chicken, Strain the Pan and add to pan. STIR


 9. Serve and enjoy

Super Lazy Super Tasty Sunday Dinner

Too many drinks this saturday night? Don't worry, Sunday dinner doesn't have to take all day. This is the easiest but most delicious alternative.


 Serves as many as you want. 
Cooking time 2 minuets prep then 1 hour cooking. 

Ingrediants 

Chicken *I used poussin because its for two however you can use a whole chicken, Chicken portions ….whatever you want really*
Pack Mixed Peppers
Chorizo Sauasge
New Potatoes
6 cloves garlic 
Pesto

Step By Step

1. Preheat oven 200c
2. Cut peppers, Slice Chorizo peel garlic and throw it all in. Make space for chicken.
3. De String your chicken and push down hard on the middle to flatten. If you know how to spatchcock go for it, if not ill teach you in my Nandos Whole Chicken coming soon.

4. Add oil, Season heavily, stick the lid on and give it a good shake around. 

5. Cook on 200c for 40 mins, remove lid and cook till golden.


6. Lift chicken out of Pot, stir the potatoes and coat in the oils. You're on your own from here!!
